Instructions (Maple Mustard Pork)

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Whisk maple syrup, mustard, garlic, rosemary, and 1 tablespoon olive oil.
  3. Pat pork tenderloins dry and season with salt and pepper.
  4. Brush pork generously with the glaze.
  5. Toss brussels sprouts and apples with remaining olive oil and thyme.
  6. Place pork in the center of a sheet pan.
  7. Arrange brussels sprouts and apples around the pork.
  8. Roast for 25 minutes until pork reaches 145 degrees.
  9. Brush pork with more glaze halfway through cooking.
  10. Let pork rest for 5 minutes before slicing.
